Simple Summer Salad


This summer salad has all the elements that you'd want from a summer salad: light yet fulfilling, sweet, salty, nutty, creamy and fresh. The ingredients are below along with the recipe to my homemade balsamic honey mustard vinaigrette. {It's a household favorite around these parts!}

Summer Spinach Salad:
Organic baby spinach
Organic strawberries
Red onion
Nuts of choice {some tasty options are: cashews, macadamias, almonds, walnuts...}
Two organic free range eggs
{if you want this as a side instead of a main dish you can omit the eggs and it's just a tasty}
Goat cheese
Homemade vinaigrette

{Oh and the off white stuff on the plate is hummus} I had it on the side with crackers.

Balsamic Honey Mustard Vinaigrette:
{Recipe Yields 2-4 Servings}
6 turns of extra virgin olive oil to a bowl
4 turns of sweet aged balsamic vinaigrette to the bowl
1/2 tablespoon of spiced mustard
1 tablespoon of honey
1 garlic glove finely grated
fresh ground black pepper and sea salt to taste
Whisk with a fork and serve!

  1. oh yum! i like the idea of hummus and eggs on the side--makes a salad more exciting :) check out my recipe for Cilantro Lime Vinaigrette! could be a great option for another summer salad :)

  3. This is my go-to salad! I never thought to incorporate egg though. I generally add grilled chicken but will gladly test our your version!

    Also, a fun alternative to honey in the vinaigrette is maple syrup (the real deal, no aunt jemimas here). Yum!
