Halloween Weekend

We have a birthday dinner tonight, a halloween party tomorrow and our annual pumpkin carving on Sunday. I just love the playfulness in the air, don't you?

And then there were three...


The time has come for me to announce some big personal news! The hubby and I are expecting our first child! We are so over the moon about our wonderful little gift. And I'm so glad to finally share the news on this here bloggy.

I'm 15.5 weeks along now and can finally see a little bump peeking through. The morning sickness is gone {thank goodness} and I can finally say that I'm feeling great! We get to know the sex of our little babe in 3.5 weeks and we are reeling with excitement and anticipation. I plan to keep blogging about my daily inspirations, foodie loves, shop news and design ideas but plan to also pop in from time to time with new bump pics and babe updates. More to come!

We don't have many plans other then to watch a friends dog and go with the breezes. Hubs leaves on Sunday for a 4 day business trip so we'll be making the most of tonight and Saturday together.

Weekend Blessings

 
 
 
 

It was a lovely weekend over here. There was halloween decorating, tea room sipping and nibbling, doggy snuggles, and brunch with the girls. Sunday brunch with the girls was at South Congress Cafe and I must say it was divine. The migas with refried black beans and smoked gouda pancake was amazing! Not shown above is the carrot cake french toast that I ordered 'to go' for hubby. Confession: I ended up eating half of it. Carrot cake's kinda my favorite!

It's S'more Season


There's no denying that s'more season is in full swing. And I'm so craving the simple three part treat like no tomorrow, hence the yummy s'more inspiration board. What's your favorite s'more variation? Those s'more bars look quite delicious but I have to say that I'll forever be partial to the original 'camp fire' version with a crisp, slightly burned marshmallow of course!

Weekend Blessings

 

We had rain this weekend! And it was a glorious blessing. Specially because of the summer drought and recent wild fires here in Austin. The rain was like magical fresh scented beams of grace showering down to bless the land. We were so happy to see the magical wet stuff that we decided to abandon the umbrella and let the rain kiss our checks. It was delightful! The weather got us in the mood for comfort food so we enjoyed soup at my favorite bistro and stayed in on Sunday for movies and homemade margarita pizza.

Cuisine {Chicken Lettuce Wraps with Peanut Sauce}

 

I pretty much have three Asian meals I make these days, lettuce wraps, ginger chicken and Asian Noodles. The lettuce wraps which I'm featuring today are so fresh and packed full of flavor. Below is the recipe, I use actual peanut butter for the sauce instead of peanut sauce or peanut oil I find it gives the wraps an extra rich and decadent flavoring.

Chicken Lettuce Wraps
2 boneless skinless chicken breast
4-5 green onions
1 1/2 cup shredded carrots
1 cup chopped button mushrooms
1 can sliced water chestnuts chopped
1 tablespoon thinly grated ginger root
1 head bibb or iceberg lettuce
salt and pepper to taste

Peanut Sauce
4 tablespoons rice vinegar
2 tablespoons teriyaki sauce
2 tablespoon tamari soy sauce
4 tablespoons creamy peanut butter
3/4 shakes of garlic powder
4 shakes crushed red pepper flakes


What to do
Salt and pepper the chicken breast and add about 1 tablespoon of light olive oil to a pan and cook on medium heat for 6 minutes on each side or until browned and done. To a large wok or skillet add in the carrots and mushrooms. Cook on medium for 3-4 minutes stirring often. To the wok add in the water chestnuts and green onion. Lightly salt and pepper the vegetable mixture. Cook for 2 minutes and turn the heat off. To a microwave safe bowl add in all the the ingredients for the peanut sauce. Microwave the mixture for 20-30 seconds. Stir the mixture together until sauce is creamy. When the chicken is done, remove from heat and cut into small chunks. Add the chicken and half the peanut sauce to the veggie mixture and stir until combined.

Serve in lettuce cups with remaining peanut sauce on top.

Weekend Blessings

 
 
 
 

It was a lovely weekend here in Austin. We're starting to feel the change of weather and let me tell you, it seemed like everyone was out and about enjoying life this weekend. There was a giddiness in the air as passer-byers seemed refreshed and excited by the subtle change in season. Friday night we had dinner with friends at a cute french bistro called Justines. The cheese plate was divine! Saturday we took our little boy {a.k.a our dog named Brodi} to his favorite dog park. He's seen swimming above on the right. After the dog park we went to Mozarts on the lake and enjoyed veggie empanadas + hibiscus mint tea. Sunday we took our little nephew to feed the ducks on town lake and were pleasantly surprised to come across a swan. It was truly a blessed weekend. I hope you had a beautiful weekend lovelies and that you're gearing up for a fabulous week!
